Vegan Chocolate Mousse with Chickpea water

An easy and delicious chocolate dessert made with water from a can of chickpeas.

Aquafaba

Aquafaba is the water found in the can of chickpeas. I discovered this whilst watching Masterchef and was amazed that this by-product is actually a great egg replacement. This substance is a game-changer for vegan recipes. 

Now whenever I make hummus, I keep the water to use as an egg alternative. I have not experimented much yet but this mousse was a hit.

Recipe Process

  1. Start off by melting dark chocolate in the microwave. I do this for 2 minutes at high speed.
  2. Use an egg frother to froth the aquafaba. This takes about 5 minutes.
  3. Once the chocolate is cooled, fold gently into Aquafaba, making sure not to keep it “fluffy”.
  4. Store in the fridge for at least an hour.
