When I was in Slovenia, Jerica had suggested on my facebook page that it would be great if I would create a healthier version of Potica. I found out that this was is a nut bread roll found Slovenia. Recipes vary but the main ingredients are clear; cinnamon, raisins, walnuts, honey and pastry. I think this is what we call cinnamon buns so here is my healthy version for you.
Cinnamon rolls are great for the winter season. You can also drizzle some honey on top. These are great if accompanied by a cup of tea.
- 3 cups almond flour + ½ cup extra for dusting
- dash of salt
- 1 teaspoon bicarbonate of soda
- ¼ cup coconut oil (melted)
- 2 tablespoons maple syrup
- 2 eggs
- 2 tablespoons honey
- 3 tablespoons cinnamon
- ½ cup chopped walnuts
- ½ cup raisins/sultanas
- Preheat the oven at 180°C.
- Mix the 3 cups almond flour, bicarbonate of soda, and salt in a bowl. Then add the remaining ingredients and mix well with a spoon. Incorporate well but do not over mix to keep the dough airy.
- Take a piece of baking paper and put some extra almond flour on it. Place the dough on the flour and cover with more almond flour. This extra almond flour will allow you to work with the dough as it will be sticky.
- Start flattening the dough with a rolling pin and create a large square. Use a knife to cut off the extra edges.
- Take the honey and drizzle evenly onto the dough and then add the cinnamon generously onto the honey.
- Finish the layer by adding chopped walnuts and raisins onto the dough.
- Start making the roll by rolling the dough. Use the underlying baking paper to help you with rolling the first part.
- Slice the rolls about 2 cm wide and layer onto a dish with baking paper.
- Bake for 10 minutes and then turnover and bake for a further 10 minutes. Keep an eye on them as the heating varies between ovens :)
