Vegan Chocolate Mousse with Chickpea water

An easy and delicious chocolate dessert made with water from a can of chickpeas.
Aquafaba
Aquafaba is the water found in the can of chickpeas. I discovered this whilst watching Masterchef and was amazed that this by-product is actually a great egg replacement. This substance is a game-changer for vegan recipes.
Now whenever I make hummus, I keep the water to use as an egg alternative. I have not experimented much yet but this mousse was a hit.
Recipe Process
- Start off by melting dark chocolate in the microwave. I do this for 2 minutes at high speed.
- Use an egg frother to froth the aquafaba. This takes about 5 minutes.
- Once the chocolate is cooled, fold gently into Aquafaba, making sure not to keep it “fluffy”.
- Store in the fridge for at least an hour.

Ingredients
- 100g dark chocolate
- 120g aquafaba (water from 1 can of chickpeas)
Instructions
- Melt the dark chocolate in microwave for 2 minutes and then let cool.
- Use an electric egg beater to froth the aquafaba. This should take about 5 minutes.
- Make sure the melted chocolate is cool and fold in the aquafaba gently to incorporate.
- Place mixture into 3 ramekins and refrigerate for at least an hour.
