A small and light sponge cake for two.
- 1 cup shredded coconut
- 4 eggs
- 2 tablespoons honey
- 1 tablespoon bicarbonate of soda
- 2 tbsp coconut milk
- Blend coconut in a food processor until it becomes powder.
- Add the remaining ingredients to food processor and mix at medium speed.
- Pour mixture in a baking dish and cook in oven for 25/30 minutes at 180°C.
