Strawberry Oat bars (one bowl recipe)

Strawberry season calls for a new seasonal recipe on my blog. This is a very easy recipe which can be prepared in advance for breakfast or as a snack.

Strawberry Oat bars (one bowl recipe)

Ingredients
- Dry Ingredients:
- 1 cup (110g) oat flakes
- 1/2 cup (60g) ground almonds
- 1/4 cup (30g) ground flaxseeds
- 1/3 cup (42g) coconut sugar
- dash of salt
- dash of powdered vanilla
- some shredded coconut (for the top)
- Wet Ingredients:
- 6 tablespoons (124g) coconut oil
- 2 cups (300g) fresh strawberries, chopped
Instructions
- Pre-heat the oven at 190°C.
- Line an 8x8 inch baking pan with baking paper.
- Start by mixing all the dry ingredients, except for coconut, in a bowl.
- Melt the coconut oil if this is solid. I use a double boiler (bain-marie) or a few seconds in the microwave.
- Pour the coconut oil into the dry mixture and combine well.
- Reserve 1/2 cup of this filling and set aside.
- Press the remaining mixture on the bottom of the prepared pan to create an even base layer.
- Scatter the chopped strawberries on top of the base and sprinkle the remaining mixture on top of the strawberries.
- Sprinkle some shredded coconut on top and bake in the oven for 35 to 40 minutes.
- Let cool and store in the fridge before serving, this will help the bars to solidify.
- Cut into 8 equal bars.
