Salmon Patties

I love salmon, but its boring to see that everybody serves it the same way. These patties were nice to have as a meal and also with salad for lunch.

Ingredients
  1. 2 salmon steaks
  2. 2 spring onions finely chopped
  3. 1/2 red capsicum diced into small pieces
  4. 1/2 fresh chilly
  5. fresh parsley
  6. salt and pepper
  7. some oats and flax seeds
  8. 2 eggs
Instructions
  1. Cook the salmon steaks under grill for about 20 minutes or until desired cooking.
  2. Break the salmon into flakes and place in a bowl.
  3. Add the remaining ingredients in the salmon bowl and mix well.
  4. Form patties using hands and place on baking sheet.
  5. Bake for a further 15 minutes under grill turning the sides half way through.
Notes
  1. Can be eaten both cold or warm.

  • Very tasty! Although mine looked more like an omlette…too much egg maybe?

    Also used basil instead of parsley…good combination I guess.

    Thanks for a lovely alternative to the usual salmon dishes!

    • Hello Stephanie, Thanks for sharing. That could be because salmon steaks were maybe too small? Mine were rather big, I use the ones with bone still on, but the salmon was not a small one.

  • That could be it. But since I didn’t need to please anyone except my tastebuds, the dish was great. Now time to get cracking with the pistacchios for tomorrow’s breakfast…Cranberry Pistachio Bars :)
