These no added sugar cookies are great to grab for breakfast or as a healthy snack. You could add maple syrup for a sweeter cookie, but they are honestly delicious as is.

Recipe can be duplicated for a bigger batch of cookies.
Ingredients
- 200g oat flakes
- 50g ground almonds
- 65g coconut oil (melted)
- 60g currants (or raisins)
- 2 tablespoons chia seeds + 6 tablespoons water
- 25g plant based milk
- 1 tablespoon cacao powder
- 1 teaspoon ground cinnamon
Instructions
- Start by mixing the chia eggs and water into a bowl, stir and let sit for about 5 minutes until chia seeds turn gummy.
- Add the rest of the wet ingredients into the bowl and mix well.
- Add the dry ingredients and mix until well combined.
- Preheat oven at 200°C.
- Form between 8-10 cookies using hands and place on baking sheet.
- Bake for 20 minutes.
- Let cool completely before storing in airtight container.
