The peanut butter and cocoa nibs surely give these muffins a heavenly kick. Enjoy with your cup of tea :)

Ingredients
  1. 1 cup almonds
  2. 1 cup ground oats
  3. 1/4 cup ground flax seeds
  4. 2 ripe small ripe bananas
  5. 1/2 cup organic peanut butter
  6. 1 egg
  7. 1 teaspoon vanilla
  8. 1 teaspoon cinnamon
  9. 2 teaspoon bicarbonate of soda
  10. 1/4 teaspoon salt
  11. handful of cocoa nibs
Instructions
  1. First grind the almonds and oats until grainy (you can use a food processor).
  2. Add the remaining ingredients and bring together with food processor.
  3. Add the rest of the ingredients except cocoa nibs in food processor and blend everything together until all the ingredients are well combined.
  4. Stir in cocoa nibs or chocolate chips in batter and gently stir with a spoon.
  5. Place in muffin tins and bake in the oven on medium to low heat (150°C) for 20 minutes.
  6. Insert toothpick and if it comes out clean, muffins are ready.
Notes
  1. You can omit the egg and add another banana for a vegan muffin.

    • Hi Michelle, the banana doesn’t taste in this recipe because the peanut butter and cocoa nibs supersede the taste. However if you still want to substitute it use apple sauce. Make your own by using this recipe.
