This couscous is so fun to make and eat. Take it with you at work, to picnics or serve it as a side dish. I love cauliflower cuscous, the taste is different but it will fill you up without making you regret it.
Moroccan Style Cauliflower Cuscous
- 1 head cauliflower
- ½ teaspoon turmeric
- 1 teaspoon curry powder
- 1 teaspoon cumin
- 1 teaspoon coconut oil
- 1 fresh pomegranate
- Fresh parsley
- To make the cauliflower couscous just blend 1 cleaned cauliflower with food processor until cauliflower is in couscous size.
- Stir fry cauliflower in 1 teaspoon coconut oil with turmeric, cumin and curry. You can add garlic powder if you wish.
- When cooled add parsley and pomegranate.
- Best served chilled :)
