This couscous is so fun to make and eat. Take it with you at work,  to picnics or serve it as a side dish. I love cauliflower cuscous, the taste is different but it will fill you up without making you regret it.

Moroccan Style Cauliflower Cuscous

Ingredients
  1. 1 head cauliflower
  2. ½ teaspoon turmeric
  3. 1 teaspoon curry powder
  4. 1 teaspoon cumin
  5. 1 teaspoon coconut oil
  6. 1 fresh pomegranate
  7. Fresh parsley
Instructions
  1. To make the cauliflower couscous just blend 1 cleaned cauliflower with food processor until cauliflower is in couscous size.
  2. Stir fry cauliflower in 1 teaspoon coconut oil with turmeric, cumin and curry. You can add garlic powder if you wish.
  3. When cooled add parsley and pomegranate.
  4. Best served chilled :)
