  1. 1 spring onion
  2. 2 tomatoes
  3. 1 big avocado
  4. ½ lemon
  5. fresh parsley
  1. Chop all the vegetables excluding avocado and lemon.
  2. Cut the avocado into chunky pieces using this method
  3. Pour juice of ½ lemon on the avocado to prevent from browning.
  4. Stir together gently together and keep chilled until ready to serve.
