Chocolate Chip Cookies

Who doesn’t love chocolate chip cookies? Very few I think :) These are so good that no one would believe that they are healthy and sugar free.

Ingredients
- ¼ cup coconut oil
- 2 tablespoons honey
- 1 large egg, room temperature
- 2 teaspoons vanilla
- 1½ cups + 2 tablespoons almond flour
- 1 teaspoon bicarbonate of soda
- ½ teaspoon sea salt
- 35g dark chocolate drops
- ¼ cup cocoa nibs
Instructions
- Preheat oven at 190°C.
- Beat egg with coconut oil in a food processor with S blade.
- Add in other wet ingredients and blend well.
- Add in the dry ingredients except chocolate drops and cocoa nibs and mix well together with food processor.
- When ready remove S blade and mix in the chocolate drops and cocoa nibs with a spoon.
- Cover baking dish with baking paper.
- Take a spoon with batter and place it on baking paper. Then gently press batter with back of spoon.
- Repeat with remaining dough leaving space between cookies.
- Bake in pre-heated oven for 15 minutes or until cookies are golden.
- Cookies will get bigger when cooked. I had 10 good sized cookies.
Notes
- You can replace cocoa nibs with more chocolate drops.

Hry rody! Loved them! I forgot to put seasalt :( so im sure that would have been better! I added some oats in with the almond flour because when i cook biscuits with almond flour, it makes a more doughy texture but not one that i love… But this came good! Would prefer a more crnchy texture but went down a treat! Thank you so much!
Hey, mine were not crunchy but not all conventional cookies are crunchy, in fact the larger ones usually are not. I loved them, they smelled and tasted so good! I wouldn’t have added oats as it might have lost some of the flavor but if it works for you… :)
