Cauliflower Veggie Patties

A quick and easy vegetarian meal. You can make these in advance and store them in fridge for up to five days, otherwise you can store in freezer. Enjoy as a side meal or as part of a salad.

Ingredients
  1. 1 large head cauliflower
  2. 2 garlic cloves
  3. 1 onion
  4. 2 teaspoon chilly powder
  5. 1 teaspoon Thai spices
  6. ½ teaspoon cumin
  7. 2 cups almond flour
  8. 2 eggs
  9. ½ cup pumpkin seeds
Instructions
  1. Blend the cauliflower until couscous size using S blade in food processor. Alternatively you can use a cheese grater.
  2. Blend all the ingredients using a food processor or a spoon.
  3. Using your hands, make round balls and then flatten into a patty. Place on a baking tray lined with baking paper.
  4. Bake in oven for 30 minutes turning over half way through.
