Cauliflower Veggie Patties
A quick and easy vegetarian meal. You can make these in advance and store them in fridge for up to five days, otherwise you can store in freezer. Enjoy as a side meal or as part of a salad.
- 1 large head cauliflower
- 2 garlic cloves
- 1 onion
- 2 teaspoon chilly powder
- 1 teaspoon Thai spices
- ½ teaspoon cumin
- 2 cups almond flour
- 2 eggs
- ½ cup pumpkin seeds
- Blend the cauliflower until couscous size using S blade in food processor. Alternatively you can use a cheese grater.
- Blend all the ingredients using a food processor or a spoon.
- Using your hands, make round balls and then flatten into a patty. Place on a baking tray lined with baking paper.
- Bake in oven for 30 minutes turning over half way through.
