Aubergine Base Mini Pizzas

Whenever I make pizza you know it must be a guilt free alternative! I love aubergine base pizza. I think the trick is that you serve it with your favorite pizza toppings and if you add oregano and cheese it will easily taste like one. Be creative and do your own favorite toppings.

Ingredients
  1. 1 large aubergine
  2. 1/2 yellow bell pepper
  3. 1/2 red bell pepper
  4. 8 cherry tomatoes
  5. 2 spring onions
  6. goat cheese or mozzarella
  7. olive oil
  8. salt and pepper
  9. cayanne chilly pepper
Instructions
  1. Slice the aubergine in thin round slices and drizzle with olive oil, salt and pepper.
  2. Put aubergine slices under grill and grill for 10-15 minutes.
  3. In the meantime slice bell peppers and onions. Cut the cherry tomatoes in half. Stir fry these vegetables adding some olive oil, oregano and chilly pepper.
  4. Take aubergines out of the grill, turn over and place some of the bell pepper mixture onto each aubergine round. Then add some grated cheese and put under the grill for a further 10-15 minutes.
  5. Your pizzas are done! Enjoy!
Notes
  1. Replace toppings with your favorite pizza ingredients.
  2. Also try my cauliflower crust pizza or my chicken base pizza
