Air Fryer Dorado Fillets (Lampuki)

We love lampuki, they are reasonably priced wild fish which can be cooked in various ways. I usually make them al cartoccio with tomatoes, olive oil, lemon, garlic, olives, and a bit of white wine. However, since they are a bit dry they are usually better fried. I personally hate frying so I came up with the idea to make them in the air fryer. They’ve been a hit with my toddler and are also husband-approved. They’ve quickly become a family favorite recipe.
We didn’t de-skin the fillets and the skin is quite edible in this recipe, however, using this method also makes it easily come off once cooked (unlike when we make them al cartoccio).
Air Fryer Dorado Fillets (Lampuki)

Ingredients
- 600 grams of Dorado fillets (approximately 1kg Lampuki fish, filleted)
- 1 cup of breadcrumbs
- 1/4 cups of flour
- 2 tablespoons of olive oil
- 1 egg
Instructions
- Cover the fillets in olive oil beforehand for at least 2 hours.
- Preheat the airfryer at 200°C.
- Coat the fillets first in flour then egg and breadcrumbs.
- Cook for 9 minutes at 200°C.
